  • Preparing the Crust

    Mix the graham cracker crumbs with the melted butter and a tablespoon of sugar until the mixture resembles wet sand. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake the crust for 10 minutes at 350°F (175°C) to set it, then allow it to cool completely before adding the filling.

  • Mixing the Silky Filling

    Beat the room-temperature cream cheese and sugar together until completely smooth and fluffy. Add the sour cream, vanilla, and lemon zest, mixing on low speed to avoid incorporating too much air, which can cause cracks. Add the eggs one at a time, mixing just until combined.   • The Water Bath and Slow Cool

    Wrap the outside of the pan in foil and place it in a larger roasting pan filled with hot water (bain-marie). Bake at 325°F (160°C) until the edges are set but the center still wobbles slightly. Turn off the oven and leave the door cracked for an hour to let it cool slowly. Finally, refrigerate for at least 6 hours. This slow process prevents the surface from cracking.
