Personne(s)
  • 400 g
    Fettuccine Pasta
  • 200 ml
    Heavy Cream
  • 60 g
    Unsalted Butter
  • 100 g
    Parmesan Cheese
  • 2 pcs
    Garlic
  • 0.1 g
    Nutmeg
  • 5 g
    Fresh Parsley
  • 1 cuillère à café
    Salt
  • 1 cuillère à café
    Black Pepper
Instructions
  • Preparing the Infused Cream Base

Melt the butter in a large skillet over medium heat. Add the crushed garlic and sauté for about 1 minute until fragrant (be careful not to let it burn). Then, add the heavy cream and let it simmer over low heat for about 3–4 minutes until it begins to bubble gently. A pinch of nutmeg added at this stage enhances the depth of the sauce.

  • Melting the Cheese

Turn the heat down to the lowest setting. Add the freshly grated Parmesan cheese little by little while stirring constantly. Continue until the cheese has completely melted and the sauce has reached a smooth, thick consistency. If the sauce becomes too thick, you can loosen the consistency by adding a few spoonfuls of the reserved pasta water.

  • Tossing and Serving

Transfer the al dente fettuccine directly into the sauce pan. Toss thoroughly with tongs to ensure that every strand of pasta is completely coated with the sauce. Serve hot, garnished with freshly chopped parsley and extra black pepper.

Fettuccine Alfredo is one of the most luxurious and beloved dishes in modern Italian-American cuisine. Its origins trace back to the early 20th century, to Alfredo di Lelio, who prepared a nourishing meal for his wife at his restaurant in Rome. Although the original recipe consisted solely of butter and fresh Parmesan cheese, the version prepared with cream has gained popularity worldwide. Culturally situated at the pinnacle of “comfort food,” this dish is renowned for its silky sauce and a texture that envelops the pasta like velvet.
