  • Sautéing the Vegetables

    Heat olive oil in a pot over medium heat. Add onions, carrots, and celery. Cook until softened, then add garlic and sauté for 30 seconds.

  • Adding Chicken & Broth

    Place chicken pieces into the pot. Pour in chicken broth, then add bay leaf, thyme, salt, and pepper. Bring to a gentle boil.

  • Simmering Reduce heat and simmer

    for 20 minutes until the chicken is fully cooked and tender.

  • Shredding the Chicken

    Remove chicken from the pot, shred it with two forks, and return it to the soup.

  • Adding the Noodles

    Add egg noodles to the pot and cook for 6-8 minutes until tender.

  • Final Adjustments

    Taste and adjust seasoning. Add lemon juice for brightness if desired.

  • Serving Serve hot, garnished with

    fresh parsley.
