For the Chicken Marinade:

  • Chicken Thighs: 700 g (bone-in preferred)
  • Yogurt: 150 g
  • Ginger-Garlic Paste: 2 tbsp
  • Turmeric: 1 tsp
  • Red Chili Powder: 1 tsp
  • Garam Masala: 1 tsp
  • Lemon Juice: 1 tbsp
  • Salt: 1 tsp

For the Rice:

  • Basmati Rice: 400 g (soaked 30 minutes)
  • Green Cardamom: 4 pods
  • Cloves: 4 pcs
  • Cinnamon Stick: 1 pc
  • Bay Leaf: 1 pc
  • Salt: 1 tbsp

For Layering:

  • Onions: 3 pcs (thinly sliced, fried until golden)
  • Saffron: a pinch (soaked in 3 tbsp warm milk)
  • Fresh Mint: 10 g
  • Fresh Cilantro: 10 g
  • Ghee: 2 tbsp

  • Het marineren van de kip

    Combine yogurt, ginger-garlic paste, spices, lemon juice, and salt. Coat the chicken thoroughly and marinate for at least 1 hour (overnight preferred).

  • Parboiling the Rice

    Boil water with whole spices and salt. Add soaked basmati rice and cook until 70% done grains should be long and firm. Drain immediately.

  • Cooking the Chicken Base

    In a heavy pot, heat ghee and add marinated chicken. Cook until the chicken begins to release its juices but is not fully done.

  • Layering the Biryani

    Spread half the rice over the chicken. Add fried onions, mint, cilantro, and saffron milk. Add remaining rice and repeat. Drizzle ghee on top.

  • Dum Cooking

    Seal the pot with foil or dough. Cook on low heat for 40 minutes. Let rest 10 minutes before opening.

Chicken Biryani is one of India’s most celebrated dishes a royal, aromatic, layered rice creation that blends marinated chicken, fragrant basmati rice, caramelized onions, saffron, and warm spices.
