  • Marinating the Chicken

    Start by preparing the marinade: combine 120 g yogurt, 2 tbsp lemon juice, 4 minced garlic cloves, 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, ½ tsp turmeric, ¼ tsp cinnamon, and salt & pepper. Add 700 g boneless chicken thighs, coating them thoroughly in the vibrant yellow-orange mixture. Let the chicken marinate for at least 2 hours, allowing the spices and yogurt to tenderize and flavor the meat deeply.

  • Roasting the Chicken

    Preheat your oven to high heat. Arrange the marinated chicken thighs on a tray and roast until the edges char and the inside becomes tender and juicy. Once cooked, slice the chicken thinly to mimic traditional shawarma shaved from a spit.

  • Preparing the Wraps

    Warm 4 pieces of pita bread and spread each with a generous layer of garlic sauce (toum). Add the sliced chicken, followed by sliced tomatoes, 100 g pickles, and a sprinkle of fresh parsley. Roll the pita tightly to form a classic shawarma wrap.

  • Final Presentation

    Slice the shawarma wraps and serve with fries or extra garlic sauce for dipping.

  • Ingredients
