  • Mashing the Avocado

Cut the ripe avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados using a fork or a pestle. However, take care not to turn them into a complete puree; for an authentic texture, pea-sized chunks should remain. Immediately add the lemon juice to prevent the avocado from turning brown (oxidizing).

  • Mixing the Aromatics

Add the finely chopped red onion, tomatoes, cilantro, and chili peppers. Add the salt. Gently mix all the ingredients. It is important that you have removed the seeds from the tomatoes beforehand to prevent them from releasing their juices; this ensures the guacamole does not become watery and retains its consistency.

  • Resting and Serving

Let the sauce you have prepared sit at room temperature for 15 minutes; this allows the flavors to meld together. Serve with plenty of corn chips on the side. If you need to store it, cover the surface directly with plastic wrap (ensuring no contact with air).

Guacamole is one of the greatest gifts Mexican cuisine has bestowed upon the world, boasting a deep history that dates back to the Aztec Empire. Combining the creamy texture of avocado with the acidity of lime and the heat of chili peppers, this “sauce” is far more than just a snack; culturally, it stands as a symbol of sharing. Authentic guacamole should never be a smooth purée; it must retain chunks of avocado and should always be prepared “on the spot” using fresh ingredients.
