Instructions
  • Searing the Beef

    Heat olive oil in a large pot over medium-high heat. Add beef cubes in batches and sear until browned on all sides. Remove and set aside.

  • Sautéing Aromatics In the same

    pot, add onions, carrots, and celery. Cook until softened. Add garlic and cook 30 seconds more.

  • Adding Tomato Paste & Flour

    Stir in tomato paste and cook for 1 minute to deepen flavor. Sprinkle flour and mix to coat the vegetables, forming the base of the stew's thick gravy.

  • Deglazing & Adding Broth

    Pour in beef broth, scraping the bottom to release browned bits. Add bay leaf, thyme, salt, pepper, and Worcestershire sauce if using.

  • Returning the Beef

    Add the seared beef back into the pot. Bring to a simmer, then reduce heat to low. Cover and cook for 1 hour.

  • Adding Potatoes & Carrots

    Add potatoes and additional carrots. Continue simmering for 45-60 minutes until the beef is tender and the vegetables are soft.

  • Final Adjustments

    Add peas if desired and cook 5 minutes more. Taste and adjust seasoning.

  • Serving Serve hot with crusty

    bread, rice, or mashed potatoes.
