Chicken Enchiladas are a vibrant and comforting Mexican classic soft corn tortillas filled with shredded chicken, rolled tightly, and smothered in a rich, smoky red chili sauce. The sauce, made from dried guajillo and ancho chilies, delivers a deep earthy flavor with mild heat and a hint of sweetness. Once assembled, the enchiladas are baked until the tortillas absorb the sauce and the cheese melts into a bubbling golden crust.
This dish embodies the heart of Mexican home cooking: bold flavors, warm spices, and a balance of textures. Each bite offers tender chicken, silky sauce, and melted cheese, creating a deeply satisfying experience.
