    Heavy Cream
  • 1.5 tsp
    Salt
  • 1 tsp
    Black Pepper

    Thyme

    Bay Leaf
Directions
  • Sautéing the Aromatics

    Heat butter and olive oil in a pot over medium heat. Add chopped onions and cook until soft. Add garlic and sauté for 30 seconds until fragrant.

  • Adding Potatoes & Seasoning

    Add cubed potatoes to the pot. Stir in salt, pepper, and thyme. Mix well to coat the potatoes with flavor.

  • Adding Broth

    Pour in the broth and add the bay leaf. Bring to a gentle boil, then reduce heat and simmer for 20-25 minutes until potatoes are very soft.

  • Blending the Soup

    Remove the bay leaf. Use an immersion blender (or transfer to a blender) to puree until smooth and creamy.

  • Adding Cream Return soup to

    the pot and stir in heavy cream. Heat gently without boiling to maintain a silky texture.

  • Final Adjustments

    Taste and adjust salt and pepper. Add more cream for extra richness if desired.

  • Serving Serve hot with optional

    toppings like crispy bacon, cheese, chives, or croutons.
