Vaak vergeleken met lasagne, is moussaka veel aromatischer dankzij warme mediterrane kruiden zoals kaneel, nootmuskaat en piment. Het gerecht begint met plakjes aubergine die gezouten, even laten rusten en licht gebakken worden voor een zachte, boterachtige textuur. De vleessaus wordt langzaam gegaard met tomaten, uien, knoflook en kruiden tot een dikke, smaakvolle saus. Tot slot wordt een rijke bechamelsaus met melk, boter en nootmuskaat over de lagen gegoten en gebakken tot het goudbruin en licht geblisterd is.
